Neal's Yard Creamery Finn Soft Cheese 200g

Finn is a soft, cream-enriched cow's milk cheese made by Neal's Yard Creamery on Dorstone Hill at Dorstone in Herefordshire, overlooking the river Wye, from whole milk collected from Stephen and Sarah Fletcher's farm at Walterstone in the foothills of the Black Mountains, with a little extra cream added to the vat.

The milk is pasteurised and the cheese is set with vegetarian rennet, then ripened for two to three weeks under a creamy-white mould rind. The creamery's own description is soft with a rich, double-cream texture: lactic and creamy when young, taking on walnut and mushroom flavours as it matures. A young Finn is mild and buttery; leave it a week or two and the rind softens the paste and the flavour turns fuller and more savoury.

Serve it at room temperature as the soft cheese on a board, beside a firmer wedge of Quicke's Mature Clothbound Cheddar and a blue such as Oxford Blue Creamy Blue Cheese. It spreads well on plain crackers, and a spoon of Single Variety Co. Sonata Strawberry Preserve or a few fresh figs suit the cream. It also bakes gently: score the top, warm it through and serve with bread.
