Rosebud Preserves Damson Fruit Cheese 113g

Damson Fruit Cheese is a dense, sliceable preserve of damsons cooked down with unrefined cane sugar and fresh lemon juice. Rosebud Preserves make it in small batches in their kitchen at their farm near Masham in North Yorkshire, setting it with the fruit alone rather than added pectin, and it took a 3-star Gold at the Great Taste Awards.

There is more fruit than anything else in the jar: 120g of damsons go into every 100g of finished preserve, which is why it slices rather than spreads. Rosebud describe it as sweet and sharp, with a silken texture and a hedgerow flavour that tastes of autumn. Expect a deep, dark colour and a firm, jelly-like set that holds a clean edge when cut.

Cut it into thin slices and lay them against a firm, buttery brie-style cheese, which is the pairing the makers recommend. It holds up just as well beside a wedge of Baron Bigod or a crumbly blue such as Long Clawson Blue Stilton, and a slice on a plain cracker from our crackers for cheese makes a good end to a meal.

The jar holds 113g, enough for a cheese course for four. Keep it in the fridge once opened. Vegan and vegetarian, with no additives, preservatives or pectin.
