Cornish Sea Salt Chilli Hit Santa Cruz 50g

A 50g pot of sea salt blended with a Santa Cruz chilli mix, made by Cornish Sea Salt on the Lizard Peninsula in Cornwall from crystals hand-harvested at their salt house a few metres from the Atlantic. The salt is the same one they sell on its own; the chilli blend is added afterwards.

The maker describes it as a briny burst of heat with every pinch: the fresh notes of the sea with the rounded heat of a chilli mix. The list is longer than it looks. The Santa Cruz blend is chilli, oregano, salt, garlic powder and cumin, and to that go garlic, onion, red pepper, crushed chillies, tomato, jalapeño and a little rapeseed oil. So the flavour is closer to a smoky, savoury chilli seasoning than to plain chilli flakes, with the salt carrying it.

The maker suggests it on eggs, in curries, on fish and poultry, in dips and sauces, in barbecue marinades, and even in cocktails and brownies. At home it is most useful on fried eggs, roast potatoes and corn on the cob, and rubbed onto chicken before it goes on the grill. Put it next to Stokes Habanero Chilli Mayonnaise for a chips-and-dip night, or use it to finish a bowl of chilli with a handful of Quicke's Mature Clothbound Cheddar on top.
