Cornish Sea Salt And Mixed Cornish Seaweed Flakes

Cornish sea salt flakes blended with organic seaweed, made by The Cornish Seaweed Company at Helston in Cornwall from seaweed hand-cut with scissors in the waters off the Lizard Peninsula, leaving the holdfast so the plant regrows. The seaweed is dried, which concentrates its flavour, then flaked into the salt.

The blend is 84% Cornish sea salt with 7% dulse, 4% nori and 4% gutweed, all organic and certified as such. The producer describes the taste as salty and oceany with a subtle smokiness, and the seaweed brings its own savoury depth, so a pinch does more work than plain salt. The flakes are also colourful, green and red against the white, which makes it a good finishing salt as well as a cooking one. The producer notes it carries potassium and magnesium salts alongside sodium, so it can help cut salt intake compared with table salt.

Use it wherever you would reach for salt. Scatter it over a fried egg, roast potatoes or grilled fish, rub it into a chicken before roasting, or stir it into a soup or stock. It is particularly good on tomatoes and on buttered new potatoes, and the producer suggests pairing it with their Cornish Seaweed Pepper Seasoning. For a plainer flake, Cornish Sea Salt Crystals 75g sits well beside it.
