A 200g carton of ginger biscuits made with both stem and ground ginger, baked by Cartwright & Butler, the Arnett family's bakery at Gilberdyke in the East Riding of Yorkshire.
The baker calls it a version of a classic biscuit with all the refinement you would expect: both ground and stem ginger go into the dough, which is baked to a crisp, light snap. Salted butter is 29% of the recipe and oats 17%, with 3.4% stem ginger, 1.8% ground ginger and a mixed spice of coriander, cassia cinnamon, ginger, cardamom, cloves, fennel and nutmeg.
Ginger biscuits want a strong cup of tea. Cornish Tea Co. Smugglers Brew would do it, or follow the spice with Brew Tea Co. Cinnamon Breakfast Tea. They are also worth trying with a piece of Long Clawson Blue Stilton, since ginger and blue cheese get on well.
