Brown Bag Crisps Beetroot, Carrot & Parsnip 40g

A 40g bag of vegetable crisps: slices of parsnip, carrot and beetroot cooked in rapeseed oil with 1% salt. Brown Bag Crisps, the family firm Phil and Viv started in Shepperton, Surrey, hand-cook them the same way as their potato crisps, and say the slices keep their size, shape and colour through the fryer.

There are five ingredients and nothing else. Parsnip comes first on the list, then carrot, then beetroot, so this is the sweet, earthy end of the vegetable crisp rather than a beetroot-only bag, and the salt is kept low enough that each root tastes of itself. The producer puts the fat at 30% less than many other brands, and the recipe took two stars at the Great Taste awards in 2020.

Open one with a sandwich at lunch, or tip it out beside a wedge of Quicke's Buttery Clothbound Cheddar and a spoon of Tracklements Sticky Fig Relish for a ploughman's that is not all brown. The colours earn them a place in a party bowl, and they go well with a glass of Belvoir Elderflower Cordial topped up with sparkling water.
