Tracklements Sticky Fig Relish

Tracklements Sticky Fig Relish is a dark, sweet relish that Tracklements make at Easton Grey near Malmesbury in Wiltshire by soaking plump figs in spiced vinegar before cooking them gently with rich, dark sugar. The recipe was inspired by a relish they tried in France.

Figs make up 42% of the jar. The spiced vinegar is cider vinegar infused with cloves, allspice, black peppercorns and cinnamon, and the sugar is a mix of muscovado and raw cane. A few chillies and a little more cinnamon finish it. The producer describes the result as at once tangy and sweet, and that is what you get: soft, jammy fruit, a warm spice edge and enough vinegar to stop it tasting like jam.

The producer says it is superb with soft cheeses and suggest creamy goats' cheese in particular. It is a natural Christmas cheeseboard relish, and Woman magazine said as much. Try it with a ripe brie or a blue cheese, spooned onto a cracker with a slice of cold ham, or stirred into mince pie filling. It also works beside roast pork or a game terrine.

The jar holds 210g. There are no major allergens declared. Refrigerate once opened.
