Quicke's Buttery Clothbound Cheddar 150g

The youngest cheddar in the range from Quicke's, made at Home Farm, Newton St Cyres in Devon, from the milk of the farm's own herd, then clothbound and matured naturally for around three months. The maker calls it the entry point to traditional clothbound cheddar.

Three months is not long for a cheddar, and that is the point. The maker describes it as wonderfully buttery, with a subtle, clean aroma and the smooth richness of Devonshire milk. It is made with pasteurised milk, Cornish sea salt, starter culture and animal rennet, so it is not suitable for vegetarians. The texture is smooth and yielding rather than crumbly, and the flavour is milky and gentle with a light tang at the end.

It is the cheddar for people who find a mature one too much, and for children. Melt it into a toastie or a macaroni cheese, or eat it in slices with Miller's Ale Crackers and a spoon of Drivers Real Ale Chutney. On a board it sits well next to a stronger cheese as the mild end of the run.

A 150g piece, sent chilled. Keep it wrapped in the fridge and bring to room temperature before serving. Contains milk.
