Aspall Red Wine Vinegar 350ml

A 350ml bottle of organic red wine vinegar from Aspall, made at the Cyder House on the Chevallier family estate near Debenham in Suffolk, where they have made cyder since 1728 and now make vinegar by the bacterial fermentation of alcohol into acetic acid. The wine is made from Spanish grapes; the fermentation and bottling are Suffolk.

The ingredients are organic red wine vinegar and water. The makers describe it as rich and fruity, and that is the point of a red wine vinegar over a malt or a white: it carries some of the grape with it, so the sharpness has a rounder, darker flavour behind it. It is vegan and naturally gluten-free.

The makers' own suggestions are to deglaze a pan with a splash to make a sauce, to make a quick pickled onion for burgers, and to add a dash to roast potatoes or baked plums. It is the vinegar for a classic vinaigrette with a spoonful of Stokes Classic English Mustard, for sharpening a beef stew at the end, and for pickling red cabbage. A dash into the pan with The Garlic Farm Garlic Puree after frying steak makes a two-minute sauce.
