Applewood Smoke Flavoured Cheddar 1.5kg

Applewood is a smoke-flavoured cheddar dusted with paprika, made by Applewood at the Ilchester cheese dairy at Ilchester in Somerset, where Barber's Somerset cheddar arrives from the Barber family farm about thirty miles down the road and is turned into the smoky cheese first created in Somerset in 1965. This is a 1.5kg half wheel.

Three ingredients: cheddar cheese, smoke flavouring and paprika. The base is Barber's Somerset cheddar, made from fresh milk from Red Tractor assured farms, and the maker's own description is the original dreamy, creamy smoky cheddar, complemented with a dusting of paprika. In practice it is a smooth, mellow cheddar rather than a sharp one, with a gentle, even smokiness right through the paste and a thin coat of paprika on the outside that adds colour and a faint sweetness. The maker marks it as suitable for vegetarians.

The maker suggests it on a cheeseboard or melted on pasta, and melting is where it shines: it makes a smoky macaroni cheese, a good toastie, and a strong topping for a burger. On a board, its softness contrasts with a crumbly Mrs Kirkham's Clothbound Lancashire Truckle, and a spoon of Stokes Red Onion Marmalade 265g or a smear of Tracklements Sweet Mustard Ketchup suits the smoke.
