Stokes Red Onion Marmalade 265g

A red onion relish made with sticky black treacle and balsamic vinegar, cooked in small batches by Stokes at the Old Stables kitchens of Rendlesham Hall in Rendlesham, Suffolk, where the firm has cooked its sauces and relishes since 2004.

Red onion makes up half the jar, with 30% sugar and cane molasses, 10% balsamic vinegar of Modena, red wine vinegar, black treacle, sea salt and a little spice. The producer describes it as full flavoured with a sweet sauce. Great Taste judges called it a clever twist on a classic condiment, with good soft onions, and liked the balance between the balsamic and the treacle. The onions are soft and sweet, the treacle gives it a dark edge, and the two vinegars stop it from being jammy.

The producer suggests it with cheese, cold meats, meat pies and a ploughman's lunch, and says it lifts cheese on toast to something special. Use it in a cheese toastie, on a burger, in a sausage sandwich, or stirred through mashed potato. On a board it goes well with a mature cheddar such as Wookey Hole Cave Aged Cheddar, a wedge of Long Clawson Blue Stilton, and a stack of Miller's Ale Crackers.
