Applewood
In 1965 the Ilchester Cheese Company created Applewood in Somerset, and it still makes the smoky cheddar at its dairy in Ilchester. The cheddar comes from Barber's, 30 miles away, where the family has made cheese since 1833. The smoky taste comes from smoke flavouring, and the original is finished with a dusting of paprika.
