Winslade is a soft cow's milk cheese from the Hampshire Cheese Company at Herriard, ringed with a band of spruce that lends a gentle woodland note. Sitting somewhere between a Camembert and a Vacherin, it runs to a silky, savoury centre and bakes beautifully in its box. A 230g wheel, sent chilled. Bring it up to room temperature before serving.
