Hampshire Cheese Co Winslade Soft Cheese 230g

Winslade is a soft cow's milk cheese ringed with a band of spruce, in a 230g wheel. Hampshire Cheese Company make it by hand at Herriard, Hampshire, from pasteurised milk with a vegetarian coagulant, using milk from a single herd at Rotherfield Park in nearby East Tisted.

The producer calls it a cross between a Vacherin and a Camembert, developed over five years as a sibling to their Tunworth, and describes a ripe Winslade as soft and unctuous with a quiet floral earthiness: milder than Tunworth, rich and gentle on the palate. The spruce collar gives it a distinct pine note that you smell before you taste it. Fully ripe, the paste is spoonable and buttery.

Let it come to room temperature, then cut the top off and spoon it straight out with Peter's Yard Sea Salt Sourdough Flatbreads. It also bakes well in its box for a fondue-style dip with boiled new potatoes and cornichons. On a board, match it with Tracklements Spiced Plum Chutney and a glass of Lyme Bay Winery Chardonnay.
