White Lake Driftwood Ash Goat's Cheese Log 215g

Driftwood is an ash-coated goats' cheese log with a wrinkled geotrichum rind, made by White Lake Cheese at Bagborough Farm in Pylle, near Shepton Mallet in Somerset, from thermised goat's milk with vegetarian rennet. It took two Gold awards at the International Cheese and Dairy Awards in 2023.

White Lake describe it as beautifully creamy and soft textured, with subtle peppery and earthy undertones alongside citrus notes. Under the dark ash the paste is pale and yielding, and the flavour sits between fresh and lemony and something more savoury as the rind develops. Milk is the only declared allergen.

The maker's own advice is that it goes extremely well with chilli jam, and Single Variety Co. Fireflame Chilli Jam does the job. They also suggest it on salads and on pizza: slice rounds over a warm beetroot and walnut salad, or drop pieces onto a flatbread for the last few minutes in the oven. On a board it sits well beside a wedge of Quicke's Mature Clothbound Cheddar for contrast.

A 215g log, sent chilled. Thermised milk and vegetarian rennet, so suitable for vegetarians. Bring it to room temperature before serving and keep the rest wrapped in the fridge.
