Two Farmers farm in Herefordshire — the potatoes go from field to crisp without leaving the county. Lady Claire, Lady Rosetta and Taurus varieties, chosen for fry colour and quality, are sliced and cooked in small batches in high-oleic sunflower oil.

The seasoning is built around Hereford Hop, a semi-hard cheese made by Charles Martell & Son — the Gloucestershire cheesemakers who also produce Stinking Bishop. Washed in perry and rolled in hops, Hereford Hop gives a sharper, more complex edge than cheddar alone, balanced here with onions grown on the same Herefordshire farm.

The result is a flavour you recognise immediately but can't quite place the last time you had it this good.
