Tracklements Caramelised Onion Marmalade 345g

Tracklements Caramelised Onion Marmalade is a sweet, sticky onion preserve that Tracklements make at Easton Grey near Malmesbury in Wiltshire. It was formerly sold as Original Onion Marmalade, and the producer says it was the first onion marmalade made in the UK.

Onions make up 46% of the jar, cooked with raw cane sugar and a spiced cider vinegar carrying cinnamon, cloves and ginger. Concentrated redcurrant juice, described by the producer as a splish, gives it a pleasing tang, and a little sunflower oil, citrus pectin and lemon juice set it. Expect soft, dark onions in a sweet, sharp syrup with a mild warmth from the spice, and a full-bodied flavour, as Cook Vegetarian put it.

The producer suggests it with sausages, stirred into gravy or on a cheeseboard, and says it is excellent with pates, terrines and cheeses. Spoon it into a sausage sandwich, melt it over bangers in the last minutes of cooking, or pile it on a burger with a slice of cheddar. It also lifts a goats' cheese tart, a ploughman's or a cold beef sandwich.

The jar holds 345g, the larger of the two sizes. There are no major allergens declared. Refrigerate once opened.
