Tiptree Rhubarb with Ginger Conserve

Tiptree Rhubarb with Ginger Conserve is made by Wilkin & Sons on their estate at Tiptree in Essex, where the family has farmed since 1757 and has made preserves since 1885, still using fruit from its own farm. The producer describes it as a distinctive conserve of rhubarb and ginger.

It is prepared with 51g of rhubarb and 9g of ginger per 100g, and the ingredient list runs to sugar, rhubarb, ginger, citrus pectin and citric acid. The producer's words are the distinctive and tangy flavour of rhubarb, balanced by the warmth of the ginger, and that is exactly how it reads on the spoon: the rhubarb is the sharp, fruity part, the ginger comes in behind it as a slow warmth, and the sugar holds the two together. It is a conserve rather than a jelly, so there is fruit in it you can see.

Wilkin & Sons suggest it as a cake filling, stirred into yoghurt or spread on toast. It also does well on a warm scone, spooned over rice pudding or porridge made with Wilton Porridge Oats, and with a pot of Tregothnan English Breakfast Tea alongside.
