Tiptree Christmas Conserve 340g

A spiced plum conserve made by Wilkin & Sons on the Tiptree estate in Essex, where the firm has made preserves since 1885 and still grows fruit on its own farm.

Plums, damsons and redcurrants are cooked with sugar and sultanas and a warming mix of cinnamon, ginger, cloves and a pinch of chilli powder, set with citrus pectin. It is deep red, more fruit than spice, with the damsons giving it the sharpness that a plain plum jam lacks. The producer's own line is rich, dark plums and a warming blend of spices, and that is about right.

Spread it on toast or a warm croissant on Christmas morning, use it to fill a Victoria sponge or jam tarts, or warm a spoonful to glaze a ham. It sits well in a breakfast hamper with the Hawkshead Relish Christmas Marmalade and a jar of the same producer's Strawberry and Champagne Conserve.
