A 250g jar of single-origin wildflower honey from The London Honey Co. of Bermondsey in Greater London, a company started by Steve Benbow in 1999 with hives on a roof near Tower Bridge, whose honeys are unpasteurised and minimally filtered.
This one is the company's summer harvest from its apiary on the Wiltshire borders, where the producer says the bees work the tumbling Wiltshire downland, taking yellow melilot and sainfoin and wild bramble hedgerows. The producer describes it as complex, with delicate undertones and a charming aroma. It is a summer harvest, and because nothing is blended in, each season tastes a little different. The jar contains honey and nothing else, made, as the label says, by the bees and the beekeepers' own hands.
The producer suggests it with seasonal fruit and yoghurt, on warm toast or crumpets, as a dressing for savoury dishes, or across roast vegetables. It is also a natural partner for a soft goat's cheese such as the White Lake Driftwood, spooned on a Peter's Yard Original Sourdough Cracker, and it belongs on the cheeseboard shelf as much as the breakfast table.
250g glass jar. Raw honey can set over time; stand the jar in warm water to loosen it. Not suitable for babies under twelve months, as with all honey.
