The Cornish Seaweed Company Organic Seaweed Flakes

Dried, flaked organic seaweed made by The Cornish Seaweed Company at Helston in Cornwall from seaweed hand-cut with scissors in the waters off the Lizard Peninsula, leaving the holdfast so the plant regrows. Drying concentrates the flavour and makes it easy to keep in the cupboard.

The mix is sea spaghetti, kelp, dulse and bladder wrack, certified organic, with no additives or preservatives. The producer sums up the taste as deep, savoury, salty, hearty and naturally umami, and that is the job it does in a pan: it behaves like a seasoning and a stock cube at once. The producer also lists it as high in protein and dietary fibre and naturally rich in iodine, magnesium, potassium, calcium and iron, among other minerals.

The producer's suggestions are the right ones. Add a teaspoon to soups, stews, stocks and curries while they cook, sprinkle it over vegetables with olive oil before roasting, rub it into fish or meat, or knead it into bread dough. It is good stirred through rice or pasta with a splash of TruffleHunter English Black Truffle Oil 100ml, and it deepens a tomato sauce. For a single-species alternative try their Organic Dulse Flakes, or the milder Organic Sea Salad Flakes.
