King Stone Dairy Rollright Washed Rind Cheese 250g

Rollright is a soft, washed-rind cow's milk cheese banded in spruce bark, made by hand by King Stone Dairy at Manor Farm, Chedworth in Gloucestershire, from the milk of a single organic herd. The dairy describes itself as a small-scale, quality-focused farmhouse cheesemaker.

It is made from pasteurised cow's milk with cheese cultures, salt and animal rennet, so it is not suitable for vegetarians, and aged for four to eight weeks. The dairy describes a delicate, peachy-pink rind and a rich, spoonable texture, with flavours of crème fraîche, cured ham and mustard seed and a smoky, woodsy aroma from the bark. Young, it is buttery and mild; with a few more weeks it gets softer, stronger and more savoury.

Bring it up to room temperature and it can be spooned straight from the wheel onto bread. Or bake it whole for ten to fifteen minutes until it slumps, and dip in boiled new potatoes, cornichons and a slice of ham. The dairy also suggests it in a pithivier. On a board it suits a slice of Peter's Yard Original Sourdough Crackers and a spoonful of something sharp such as Rosebud Preserves Quince Jelly. Its stablemate Yarlington is washed in cider rather than brine alone.

A 250g wheel. Contains milk and, because of the animal rennet, is not suitable for vegetarians. Keep refrigerated and take it out an hour before serving.
