Kent & Fraser Lemon Butter Shortbread

Lemon Butter Shortbread is a 125g box of gluten-free shortbread made with 34% butter and sharpened with lemon juice, zest and oil. Kent & Fraser bake it at Park Royal in Greater London, in a bakery that has worked only with gluten-free and wheat-free ingredients since 2009.

The flour is a blend of rice, corn and maize with a little xanthan gum to hold it, and the butter does the rest. Lemon juice makes up 5%, with zest and lemon oil on top, so the citrus is clear rather than faint. The producer describes it as delicate, melt-in-the-mouth buttery shortbread, satisfyingly rich, with the taste of Mediterranean lemons. It won Great Taste Awards in 2009 and 2010.

It is a teatime biscuit first: put it out with a pot of Taylors English Breakfast or a cup of Tregothnan Earl Grey. Crumbled, it makes a base for a lemon cheesecake, and a piece beside a bowl of poached fruit or a scoop of ice cream turns either into pudding.
