Hodmedod's British Red & White Quinoa

Hodmedod's British Red & White Quinoa is a 500g pack of red and white quinoa grown on farms in the UK rather than shipped from South America. Hodmedod's pack it at Brampton, near Beccles in Suffolk, where the company works with farmers to grow pulses and grains that most people assume have to be imported.

The pack is a straight blend of two grains and nothing else. The producer calls it tasty, nutritious, versatile and easy to cook, and says the contrasting colours come into their own in salads and side dishes. White quinoa is the lighter, softer grain; red holds its shape and colour a little more after cooking, so the mix gives you both on the plate.

Rinse it, cover with one and a half to two parts water or stock, bring to the boil and simmer on a very low heat for 15 minutes, then fluff with a fork; the grains swell to two or three times their size. Use it as a base for a salad with roasted vegetables and a dressing such as Tracklements Honey Mustard Dressing, stir it into soups and stews, or serve it as a side under a piece of fish with a spoon of Tracklements Wild Garlic Sauce.
