A 500g pack of British quinoa from Hodmedod's in Beccles, Suffolk: white grown in Essex by Peter Fairs, red grown in Staffordshire.
Hodmedod's pioneered British quinoa in 2014 after more than twenty years of seed selection, proving the grain behaves just as well in an English field as in the Andes, with almost none of the food miles.
Rinse, simmer for fifteen minutes in one-and-a-half parts water or stock, fluff with a fork — the colour holds after cooking, which makes it obvious on a plate of roasted vegetables or in a grain salad with herbs and lemon.
