Hodmedod's British Grown Red & White Quinoa

Hodmedod's British Grown Red & White Quinoa is a 300g pack of quinoa grown on farms in the UK, blended at 75% white to 25% red. Hodmedod's pack it at Brampton, near Beccles in Suffolk, where the company sources its pulses and grains from farmers here rather than importing them.

There is nothing in the pack but the two grains. The producer describes the quinoa as tasty, nutritious, versatile and easy to cook, and points out that the contrasting colours come into their own in salads and side dishes. With three parts white to one part red, the cooked grain is mostly pale and fluffy with red flecks that keep a little more bite.

Rinse, then simmer in one and a half to two parts water or stock for 15 minutes on a very low heat and fluff with a fork. It stands in for rice or couscous under a curry or a stew, and it makes a good cold salad with herbs, lemon and a splash of Aspall White Wine Vinegar. The producer also suggests it in soups and for baking. A spoon of black garlic chopped through it is worth trying.
