Nettlebed Creamery Highmoor Organic Soft Cheese 300g

Highmoor is a washed-rind organic soft cheese, a 300g round, made by Nettlebed Creamery in the village of Nettlebed, near Henley-on-Thames in Oxfordshire, from milk certified organic by the Soil Association. Washing the rind as the cheese matures is what gives it its colour and its savoury character.

The creamery describes it as mild with a brothy savouriness, and says it melts brilliantly. Expect a supple, yielding paste under a sticky orange-pink rind, gentler than the smell suggests, with that brothy, meaty note growing as it ages. It won a Great Taste star in 2025. The full ingredient declaration is being confirmed with the producer, so check the pack for rennet type if that matters to you.

The creamery says it is best eaten at room temperature and pairs it with pale ale or red wine. Give it an hour out of the fridge and serve it with Miller's Ale Crackers and a spoon of Tracklements Caramelised Onion Marmalade. Because it melts so well it also works in a toastie or over new potatoes, and it belongs on any board with the rest of The Cheese Counter.
