Flower Marie Ewe's Milk Soft Cheese 200g

Flower Marie is a soft, mould-ripened sheep's milk cheese made by Golden Cross Cheese at Horam in East Sussex, a small dairy that has specialised in soft goat's and sheep's milk cheeses since 1989. It is the sheep's milk sister to the maker's ash-coated goat's log.

The ingredient list is raw sheep's milk, salt, a starter culture, microbial rennet and Penicillium candidum, so it is an unpasteurised cheese that suits vegetarians. The Penicillium candidum gives it a thin white bloomy rind, and under it the paste softens as it ripens. Sheep's milk is richer in fat and protein than cow's or goat's, which is why cheeses made from it taste sweet and creamy rather than sharp; that is the character here.

Take it out of the fridge an hour before you serve it. On a board it pairs with a sharp fruit preserve, so a spoonful of Rosebud Preserves Quince Jelly or Highfield Preserves Gooseberry & Elderflower Jam is the right thing, with a plain cracker from the crackers for cheese collection. It also melts well: try it over roasted beetroot or in a warm salad with pear and walnuts.
