Dorset Tea Pure Green Tea is a plain green tea blended by Dorset Tea at Blandford Forum in Dorset, a company whose roots go back to 1934, when its founder began blending tea in his Bournemouth kitchen. The producer describes it as light and refreshing, inspired by the green Dorset countryside.

The ingredient list is green tea, 100%, and nothing else: no flavourings, no added leaves, no lemon. Green tea is unoxidised, so it brews pale and clean, with the fresh, faintly grassy taste and gentle dryness that the leaf has on its own. Brew it with water just off the boil rather than boiling, for two or three minutes, and it stays smooth; leave it longer and it turns bitter.

Drink it without milk, in the afternoon or after a meal, when a black tea would be too heavy. It suits light food: a plain biscuit such as Farmhouse Biscuits Shortbread Rings, or a square of dark chocolate from Pump Street Ecuador Hacienda Victoria 85%. For a change, brew it strong, chill it and pour it over ice with a slice of lemon.
