A high-percentage dark bar from a single farm on the Pacific coast of Ecuador.

An 85% dark chocolate bar made in Orford, Suffolk by Pump Street Chocolate, a family-run bean-to-bar maker working above their own bakery.

The cocoa comes from Hacienda Victoria, a 460-hectare farm in Cerecita, Guayas, planted with arriba nacional trees shaded by banana and plantain. The beans are roasted, stone-ground and conched in small batches, carrying notes of black cherry, jasmine and toasted walnut. Despite the high cocoa, the bar reads as rounded rather than sharp.

Best eaten in small squares, with coffee, or paired with a glass of port.
