Pump Street Ecuador Hacienda Victoria 85%

An 85% dark chocolate bar from a single farm on the Pacific coast of Ecuador. Pump Street Chocolate, the family-run bakers and chocolate makers of Orford, Suffolk, roast, winnow, grind and conch the beans themselves, then rest the chocolate for a month before tempering it.

Three ingredients: cocoa beans, cane sugar and cocoa butter, at a minimum of 85% cocoa solids. The beans are from Hacienda Victoria, a farm established in 2011 at Cerecita in Guayas, which works to preserve the Nacional Arriba cacao variety. The maker calls it a mellow, high-percentage bar with a rich aroma and a rounded, nutty character, with tasting notes of black cherry, jasmine and toasted walnut. For an 85% it is not bitter or sharp.

Eat it in single squares at the end of a meal, with an espresso or a glass of Lyme Bay Pinot Noir. It is also the bar to grate over a chilli con carne or melt into a dark chocolate mousse where you want cocoa depth rather than sweetness. Fans of very dark chocolate will find it rounder than most bars at this percentage.
