Mrs Darlington's Red Cabbage

Mrs Darlington's Red Cabbage is shredded pickled red cabbage made near Nantwich in Cheshire by a family preserves firm that has cooked its own recipes since 1980 and still has its founder overseeing them. The producer describes it as crunchy, tasty, pickled red cabbage.

Shredded red cabbage makes up 44% of the jar, in a pickle of water, spirit vinegar, acetic acid and salt, with sodium metabisulphite as the preservative. That short list is the point. There is no sugar and no spice, so what you get is cabbage, crunch and a sharp, clean vinegar bite, which is what a pickled red cabbage is for. Keep the lid on between servings and the crunch holds.

The producer suggests it with cold meats, or beside a hotpot or a stew, where the sharpness cuts the richness. It is the classic side for a Lancashire hotpot, a plate of cold roast pork or a pork pie, and it earns a place at a ploughman's with Quicke's Mature Clothbound Cheddar and a spoonful of Mrs Darlington's Real Ale Chutney. A forkful on a cheese sandwich is not a bad idea either.
