Mrs Darlington's Red Cabbage

Mrs Darlington's make theirs in Skipton, North Yorkshire, with vinegar and spice in the proportions that keep the cabbage properly sharp and crunchy rather than soft and merely sour.

Good pickled red cabbage should have resistance, the kind of crunch that provides contrast against the richness of the foods it accompanies. With a cold pork pie it is excellent. With a ploughman's including mature cheddar, it is essential.

Cheese is cut fresh to order and sent chilled, dispatched every Monday and Wednesday. Everything in your order ships together in one insulated box, arriving the next day.
