Mrs Darlington's Piccalilli

Mrs Darlington's Piccalilli is a mustard pickle of mixed vegetables made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980 and still has its founder overseeing every recipe. The producer describes it as a tangy chutney of mixed vegetables, mustard and spices.

Vegetables make up 65% of the jar: onions, cauliflower, carrots, courgettes and green beans, in a sauce of spirit vinegar, sugar, mustard, ginger and turmeric, coloured with lutein and with no artificial colours or preservatives. The spirit vinegar gives it the sharpness, the mustard and ginger give it heat, the sugar takes the edge off, and the turmeric is what makes it yellow. The vegetables are cut chunky rather than minced.

The producer calls it fabulous with picnic pies, ham and strong cheeses, and that is the brief. Put it beside a pork pie or a slice of cold ham, or on a cheeseboard with Quicke's Mature Clothbound Cheddar and a couple of Drivers Free Range Pickled Eggs. It is also the right thing in a cheese and ham toastie, and it cuts through a plate of leftover roast pork.
