Mrs Darlington's Lemon & Lime Curd

Mrs Darlington's Lemon & Lime Curd is a double citrus curd made near Nantwich in Cheshire by a family firm that began with lemon curd on its own farm in 1980 and still has its founder overseeing every recipe. This one swaps the lemon juice for lime and keeps the lemon oil, which is where the difference lies.

The jar holds sugar, pasteurised whole egg, a vegetable oil margarine, lime juice at 15% and lemon oil, with no added colours or preservatives. The producer describes it as fresh and zingy, and the lime juice is what does it: a greener, sharper acidity than lemon alone, with the lemon oil adding the familiar scent on top. The egg gives it body and a rich finish.

One of the producer's customers rates it on hot buttered crumpets, and that is hard to argue with. It also fills a sponge or a tart in place of plain lemon curd, works as the sharp layer in a cheesecake, and goes well spooned over Wilton Porridge Oats cooked with milk. Serve it at teatime with Farmhouse Biscuits Shortbread Rings.
