Mrs Darlington's Legendary Lemon Curd

Mrs Darlington's Legendary Lemon Curd is made near Nantwich in Cheshire, to a family recipe first cooked on the family farm in 1980 with surplus eggs from the farm's egg round. The founder still oversees every recipe, and this curd is the one the business was built on.

It is made from sugar, pasteurised whole egg, a vegetable oil margarine, lemon juice at 15% and lemon oil, with no added colours or preservatives. The producer calls it sunshine in a jar, and the ingredient list backs that up: the juice brings the sharpness, the oil carries the lemon scent, and the egg gives it the richness that separates a curd from a jam. It is sweet, but the lemon keeps it from being cloying.

The producer's own suggestion is hot buttered toast or a warm croissant. It also fills a Victoria sponge, a lemon tart or a batch of meringues, and a spoonful stirred through thick yoghurt makes a quick pudding. Sandwich it between two Kent & Fraser Lemon Butter Shortbread biscuits, and pour a pot of Tregothnan English Breakfast Tea to go with it.
