Mrs Darlington's Caramelised Onion Chutney

Mrs Darlington's Caramelised Onion Chutney is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. The maker calls it a very popular chutney, and it is: a sweet, dark onion relish of the kind that has become the standard partner to cheddar.

Onions make up 46% of the jar, cooked down with sugar, dates, malt vinegar, Bramley apples, rapeseed oil, salt, spice and a little mustard, with natural caramel for colour. The dates and apple give it body and a rounded sweetness, the vinegar keeps it from being jammy, and the mustard adds a faint warmth at the end.

The maker suggests it with salads and at a barbecue, or a spoonful added to sauces and gravies for extra flavour. It is at its best with a mature cheddar such as Quicke's Mature Clothbound Cheddar on Miller's Ale Crackers, and it belongs in a sausage sandwich, on a burger, or beside a pork pie.
