A 66% dark chocolate bar with toasted sourdough crumbs and sea salt ground through it. Pump Street Chocolate, the family-run bakers and chocolate makers of Orford, Suffolk, make it from the bean: cocoa is roasted, winnowed, ground with sugar and cocoa butter, then conched for three or four days before the bar is tempered and moulded.
The chocolate is made from Ecuadorian cocoa at 66% cocoa solids. Into it go crumbs of the bakery's own sourdough, 12% of the bar, and a little Halen Môn sea salt from Anglesey. The maker's tasting notes are breadcrumbs, rich malt and deep cocoa: crunchy bread texture, a malty savoury edge, and the salt pulling everything into focus. They describe it as their bestselling bar, and say it was the first chocolate bar to combine sourdough with chocolate.
It is a bar for eating in squares rather than bolting. Have it after dinner with a cup of Cornish Coffee Stupidly Strong, or break it over vanilla ice cream where the salt and crumb do something useful. It also sits well at the end of a cheeseboard beside a wedge of Quicke's Mature Clothbound Cheddar, dark chocolate and cheddar being an older pairing than it sounds.
