A 660g iced fruit loaf cake in a gold striped tin, baked by Cartwright & Butler, the Arnett family's bakery at Gilberdyke in the East Riding of Yorkshire.
The baker describes a sweet, buttery fruit loaf, generously packed with fruit and topped with a smooth layer of marzipan. Sultanas are 44% of the cake and marzipan 11%, and the top is finished with sugar paste and green and red icing. The baker states that the palm oil in the icing is sustainably sourced.
An iced cake needs less help than a plain one. A pot of Tregothnan English Breakfast or Cornish Tea Co. Smugglers Brew is enough. The baker's advice for cutting is a serrated knife and a sawing action, wiping the knife between slices.
660g cake in a tin. Contains almonds, wheat (gluten), egg, milk and sulphites. May contain other nuts, mustard and soya. The baker warns that although every effort is made to remove cherry stones, some may remain. Once cut, keep the cake in its tin.
