A 700g fruit cake topped with whole glacé cherries and almonds, in a round tin, baked by Cartwright & Butler, the Arnett family's bakery at Gilberdyke in the East Riding of Yorkshire.
The baker describes a cake heavy with fruit and moist from butter, topped with whole glacé cherries and almonds, which are left unblanched for a better flavour. Sultanas are 46% of the cake and cherries 14%, with 3% almonds, pecans and 2% brandy. The round tin has a window in the lid.
In the north of England fruit cake is often eaten with cheese. Try a slice with Shorrocks Lancashire Bomb or a wedge of Long Clawson Blue Stilton, and a pot of Tregothnan English Breakfast.
