Billy Franks Hot N Spicy Beef Jerky 30g

A beef jerky made with grass-fed beef, scotch bonnet and naga chillies, marinated and dried low and slow by hand in small batches by Billy Franks at their factory on Druid Street in Bermondsey, London. It won two stars at the Great Taste Awards in 2016.

Slices of grass-fed beef are marinated in white wine vinegar, The Rib Man's chilli sauce, ketchup, honey, lemon juice, tamari, natural liquid smoke, garlic and black pepper, then dehydrated until chewy. The maker says the chillies will have your tastebuds fired up, rates it two out of three on its own heat scale, and describes an intensely flavoured product with the texture of real, home-made jerky. It is hot, savoury and a little sweet from the honey, with smoke behind it. No colourings, nitrates or preservatives are used, and each 30g bag has 17.7g of protein.

The maker suggests it after the gym, as a snack between meals, or with a well-deserved pint. It travels well in a coat pocket for a long walk, and it is the right thing to have beside a cold beer with a bowl of Mr Filbert's Chilli & Lime Peanuts or a bag of Brown Bag Crisps Oak Smoked Chilli. Chop it into a salad or over a bowl of noodles if you want to cook with it.
