West Country Legends Proper Job Piccalilli

A 200g jar of Proper Job Piccalilli from West Country Legends in Glastonbury, Somerset, made with traditional methods and locally sourced ingredients in the way the West Country has always made its pickles.

Vegetables make up 60% of the jar, in varying proportions of cauliflower, onion and courgette, set in a sauce of sugar, white wine and distilled malt vinegars, mustard, spices, garlic and salt, thickened with corn starch. The maker's own summary is chunky veg, sharp mustard and a tangy vinegar bite, and they call it unapologetically punchy. The vegetables keep their shape and crunch, the mustard is hot enough to notice, and the two vinegars carry the sharpness.

This is a piccalilli for a ploughman's, a pork pie and a doorstep ham sandwich. Spoon it beside a wedge of Quicke's Mature Clothbound Cheddar or a slab of Wookey Hole Cave Aged Cheddar, put it out with cold roast pork or gammon, and keep it on the table with any of the crackers for cheese at Boxing Day lunch. It also lifts a cheese toastie.
