White Lake Tor Ash Goat's Cheese Pyramid 200g

Tor is a fresh lactic goats' cheese formed into a pyramid and lightly coated with ash, made by White Lake Cheese at Bagborough Farm in Pylle, Somerset, from thermised goat's milk with vegetarian rennet. It was named Supreme Champion at the Great Yorkshire Show in 2025.

The maker describes a lemony flavour and a smooth, close texture, with the typical goat's cheese tang and a very subtle peppery undertone. The ash gives the outside its grey coat and the paste beneath stays bright and clean. Young, it is fresh and citrussy; left a while in the fridge it firms and deepens. Milk is the only declared allergen.

Take it out of the fridge an hour before serving and cut it in wedges from the point down. White Lake say it will happily stand alone on a cheese board; a smear on a rosemary cracker from the crackers for cheese collection works well, and so does a spoon of Tracklements Fresh Chilli Jam against the lemony paste. Crumble any leftovers over roasted beetroot with a little honey.

A 200g pyramid, sent chilled. Thermised milk and vegetarian rennet, so suitable for vegetarians. Keep it in its wrapping in the salad drawer of the fridge, as the maker advises.
