Tiptree Pineapple Conserve

Tiptree Pineapple Conserve is made by Wilkin & Sons on their estate at Tiptree in Essex, where the family has been making preserves since 1885 and still farms the land it has held since 1757. It is one of the range that reaches past the English hedgerow fruits, and the producer calls it sweet and tropical.

Pineapple is the first ingredient, and the conserve is prepared with 85g of fruit per 100g, followed by sugar, citrus pectin and citric acid. That is a high fruit content for a conserve, and the producer says it is made with soft chunks of the fruit, so the texture is pieces of pineapple in a set rather than a smooth spread. The citric acid keeps it from being purely sweet.

Toast is the obvious place for it, but Wilkin & Sons also suggest it as a glaze for gammon or chicken wings, and as a topping for porridge or overnight oats. Stir it through Greek yoghurt, spoon it over Wilton Porridge Oats, or use it in a coconut sponge. On a cheeseboard, it sits well beside a soft goat's cheese such as Golden Cross Ash Goat's Cheese Log.
