Stokes Real Tomato Ketchup 485g

A ketchup that starts with 200g of tomatoes for every 100g of finished sauce, made by Stokes in small batches at the Old Stables kitchens of Rendlesham Hall, Rendlesham, Suffolk. The producer calls it the star of its range, and it was one of the first two products the firm made when it started in 2004.

Sun-ripened Mediterranean tomatoes are cooked with unrefined raw cane sugar, spirit vinegar, a little cornflour, sea salt, garlic and onion powders and a seasoning that contains celery. Great Taste judges described it as a very good textured ketchup, smooth and glossy, with definitely a lot of quality tomato in here. The result pours thick and tastes of fruit first, with the sugar and vinegar in support rather than in charge.

The producer puts it with fish and chips, bangers and mash and a cooked breakfast, and suggests it as an ingredient in shepherd's pie or spaghetti Bolognese, where a spoonful adds body to the base. It belongs next to a bacon sandwich, on the side of a plate of Two Farmers Lightly Salted Hand-Cooked Crisps, or on the table beside the Brown Sauce for those who prefer their breakfast brown.
