Stokes Habanero Hot Sauce 150ml

A hot sauce made with fermented red habanero chillies, cooked in small batches by Stokes at the Old Stables kitchens of Rendlesham Hall in Rendlesham, Suffolk. It holds a two-star Great Taste Award.

Fermented red habanero purée makes up 11% of the bottle, with 8% mango, onion and tomato purées, white wine vinegar, unrefined raw cane sugar, garlic, ginger and spices. The producer says the fermented chillies deliver a rich, intense depth with a subtle fruity finish, and that the onion, tomato and mango create a sweet, fruity, gentle finish to balance the fiery heat. The Great Taste judges noted a hot sauce with a fine aroma, deep vinegar notes and a fruit melange. So expect real heat, but heat with something behind it.

The producer suggests it on spicy chicken wings, in wraps, on a pizza base and in chilli con carne, and says it turns a gentle minced beef into a fiery chilli in moments. A few drops in a Garlic Farm Garlic & Chilli Mayonnaise or over a plate of eggs works too. If you like heat with fruit, put it next to the Tracklements Rocket Hot Sauce and see which you reach for first.
