Tracklements Rocket Hot Sauce

Tracklements Rocket Hot Sauce is a thin, fiery hot sauce that Tracklements make at Easton Grey near Malmesbury in Wiltshire with a combination of bird's eye and scotch bonnet chillies. The producer calls it a potent potion and a shot of molten lava.

Cider vinegar leads the ingredient list, followed by red peppers and onions, with scotch bonnet chillies at 6% and bird's eye chillies at 2.5%. Raw cane sugar and sea salt round it out. Scotch bonnets bring a fruity heat and bird's eyes a sharper one, and with vinegar in front the sauce is sour and hot rather than sweet. It pours easily and a few drops are enough to start with.

The producer suggests it on burgers, tacos, curries and fajitas. Shake a little over fried eggs, a bowl of noodles or a pizza, stir it into a marinade for chicken wings, or add a few drops to a Bloody Mary. It also sharpens a bean chilli or a bowl of dal without changing the flavour much beyond the heat.
