Stokes Garlic Mayonnaise 300g

An aioli-style garlic mayonnaise made with free-range whole egg and real garlic purée, mixed in small batches by Stokes at the Old Stables kitchens of Rendlesham Hall in Rendlesham, Suffolk, a firm that began with mayonnaise and ketchup in 2004.

Rapeseed oil makes up 78% of the jar and free-range pasteurised whole egg 11%, with 2% garlic purée, a little unrefined raw cane sugar, acetic acid for sharpness, sea salt and mustard flour. The producer describes a rich and creamy mayo bursting with bold garlic flavour, and customers on its site talk about it being packed full of garlic but also very creamy. The garlic is plainly there without the raw rasp of a home-made aioli.

The producer suggests stirring it into creamy mashed potatoes, serving it with tapas, using it as a dip for hot prawns, or thinning it into a garlic dressing for salads. It also does the obvious jobs: chips, a chicken sandwich, a burger, or a spoonful beside grilled fish. Keep it alongside their Habanero Chilli Mayonnaise for the heat-seekers at the table, and a bowl of Brown Bag Crisps Sea Salt & Malt Vinegar for dipping.
