Rosary Garlic & Herb Goat's Cheese Drum 100g

A small drum of fresh, soft goat's cheese coated in garlic and parsley, 100g. Rosary make it at their family dairy in Landford, Wiltshire, on the edge of the New Forest, from pasteurised goat's milk with vegetarian rennet.

The ingredient list is short: pasteurised goat's milk, salt, garlic puree, parsley, starter culture and vegetarian rennet. The cheese underneath is the same fresh, mild, tangy paste as the producer's plain log, and the coating adds a savoury garlic note and a green flash of parsley. It is a mild garlic, not a raw one, so the cheese still tastes of goat's milk first.

This is a good size for two people at the start of a meal. Spread it on Miller's Ale Crackers, warm slices of it on toast under the grill and put them on a salad, or crumble it over roasted new potatoes while they are still hot. It also does the job of a garlic butter on a jacket potato, and a pot of Tracklements Caramelised Onion Marmalade alongside covers the sweet side.
