Rosary Ash Goat's Cheese Log 275g

A fresh, soft goat's cheese log coated in edible ash, 275g. Rosary make it at their family dairy in Landford, Wiltshire, tucked behind the family home on the edge of the New Forest, from pasteurised goat's milk with vegetarian rennet.

The producer describes the cheese as faintly acidic with a creamy texture, and says the ash coating, made from vegetable carbon, does not change the flavour: it is there for the look and the contrast of the dark rind against the white paste. Cut it and you get a clean, mild, lemony goat's cheese that is soft enough to spread but firm enough to slice, without the strong farmyard note some goat's cheeses carry.

Slice it into rounds and grill them on toast for a starter, crumble it over a beetroot or roasted squash salad, or put the whole log on a board with Peter's Yard Original Sourdough Crackers and a spoon of Highfield Preserves Gooseberry & Elderflower Jam. A glass of Lyme Bay Winery Chardonnay suits it.

One 275g log. Contains milk. Made from pasteurised milk and suitable for vegetarians according to the producer. Take it out of the fridge half an hour before serving.
