Pump Street West Papua 70% Drinking Chocolate

Flakes of 70% dark chocolate for melting into hot milk, from a single cooperative in West Papua. Pump Street Chocolate, the family-run bakers and chocolate makers of Orford, Suffolk, make the chocolate from the bean and then flake it, so the drink is real chocolate rather than cocoa powder and sugar.

Three ingredients: cocoa beans, cane sugar and cocoa butter, nothing else. The beans come from a cooperative in West Papua set up in 2017. The maker's tasting notes are almond, olive oil and sour cherry, and they describe a sweet, mildly nutty cocoa flavour with a fruity sour cherry note and a smooth, savoury richness like olive oil. At 70% it is a proper dark drinking chocolate, not a sweet one.

Melt the flakes into warm milk on the hob, whisking as it thickens, or use a Velvetiser or similar machine, which the maker recommends. It also works cold: the maker has an iced drinking chocolate recipe for summer. Serve it with a Farmhouse Biscuits shortbread ring or two, or a slice of ginger cake, and keep a tin of it beside the teas and coffees for winter evenings.
