Highfield Preserves Sticky Onion & Jalapeno Marmalade 220g

Highfield Preserves slow-cook their onion marmalade in Stratford-upon-Avon, Warwickshire, until the onions are properly reduced and deeply sweet, the kind of patience that characterises good preserve-making and that cannot be shortcut without the result reflecting it. The jalapeno adds warmth rather than outright heat.

On a cheese board it is exceptional, particularly with goat's cheese or a ripe brie. In a sandwich with mature cheddar it changes the whole proposition. As a glaze on grilled meat it does something unexpected and excellent.
