Highfield Preserves make their chutneys and preserves in Stratford-upon-Avon, Warwickshire, and this apple and cider version demonstrates why the combination works so well. The apples provide sweetness and body; the cider adds a gentle fermented depth and an acidity that fruit-only chutneys cannot replicate.

It works particularly well with strong cheddar, where the apple sweetness provides contrast and the cider acidity cuts through the fat of the cheese. With brie or a soft rind cheese it is equally effective. With cold pork it is perhaps the best pairing on this shelf.
