Mrs Darlington's Tangerine Marmalade

Mrs Darlington's Tangerine Marmalade is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. It took a Great Taste star in 2022, and the maker describes it as delicately sweet and flavoursome.

Tangerines are prepared at 38g of fruit per 100g and cooked with sugar, water, lemon juice, pectin and tangerine oil, with no added colour or preservative. Tangerines have thinner, sweeter peel than Seville oranges, so this is a gentler marmalade: bright orange, fine shredded, fragrant, with only a whisper of bitterness.

It suits croissants and brioche better than a bitter marmalade does, and it is a good introduction for anyone who thinks they do not like marmalade. In the kitchen, try it as a glaze for roast carrots or parsnips, or warmed and brushed over a plain cake. It also sits well with the sharper Lime Marmalade as a pair.
